I.LOVE.GYROS. So of course I had to learn to make them, and no gyro is complete with out, tzatziki sauce. In addition to being nearly impossible to pronounce phonetically, tzatziki is a sauce that is made with yogurt. Not that fake sugar loaded crap, but the real live culture greek stuff, which means it has probiotics, and that is good for you right?. This means that tzatziki is like, a health food. At least, that is what I tell myself as I shove gyros into my face with reckless abandon, breathing heavily, with grease and sauce dripping down my face and hands. This sauce is also extremely easy to make, and you can use it for a number of different things, not just gyros.


  • 2 cups plain Greek yogurt
  • 1 cup or 1 large cucumber peeled, seeds removed
  • 1-2 cloves of garlic
  • 2 tbsp extra virgin olive oil
  • 1 tsp red wine vinegar
  • juice from 1/4 lemon
  • lemon zest from 1/2 lemon
  • 4 tbsp fresh chopped dill
  • salt & pepper to taste


Microplane garlic clove(s) into a bowl with, extra virgin olive oil, red wine vinegar, lemon juice, lemon zest, dill, salt, pepper, mix and set the aside and let the flavors meld together. Then, coarsely grate the peeled cucumber with seeds removed, sprinkle a bit of salt over the cucumber and let it sit, this will draw out excess moisture. Once the cucumber has lost some of its water, scoop it out and add it to the yogurt, leaving the water behind. Finally add the rest of your ingredients and mix well. Let the tzatziki sit in the fridge for at least an hour to let the flavors come together, letting it sit over night is best.
